An agricultural researcher at North Carolina Agricultural and Technical State University has developed a simple process that makes allergen-free peanuts. This could result in millions of people with peanut allergies to be able to enjoy the many products that are made out of peanuts.
The process is getting a lot of interest from the peanut industry and it seems like it doesn't degrade the taste or quality of peanuts. Peanuts processed like this show 100% inactivation of peanut allergens in whole roasted kernels. Approximately 3 million Americans suffer from peanut allergies and 100 to 150 die each year from it.
