Kobe beef is a cut of beef from the black Tajima-ushi strain of Wagyu cattle. It's raised in a very strict tradition in Hyogo Prefecture in Japan. It's considered to be a delicacy renowned for its flavor, tenderness and fatty texture.
However, you can only eat real Kobe beef in Japan and China. The only real Kobe beef from that region in Japan is only consumed in that country, and is only exported to Macau and Hong Kong. Because there are very few restrictions on the labeling, there are many cuts of meat sold in the US with the Kobe label that aren't really from there.
Limited quantities of Kobe beef are now being imported into the US, but for now, most of the ones you've had are probably fakers.
