Eggs do not need to be refrigerated!
Most people are shocked when they travel outside of North America and notice that the eggs are not refrigerated. Because of western norms, we automatically assume that this is unsanitary, but there is actually no reason to refrigerate eggs! The reason we do refrigerate our eggs is because of US regulations.
Eggs are required to be power-washed to remove any bacteria that is on the shell, and while this is somewhat beneficial, it also removes the shell’s protective coating, which makes it easier to become contaminated later, thus making refrigeration necessary. However, if we never power washed our eggs, it would be just as safe and completely unnecessary to refrigerate eggs!
